Am I the only one that is obsessed with avocados right now?
They are a really weird fruit – they’re like the most “vegetably” fruits ever. Green. Mushy…
But they are SO healthy. Like unbelievable. High healthy fat, high fiber…
I did the keto diet for a while, and if you know keto you know that it is pretty much written in the rule book that you have to eat avocado.
So, as the responsible adult I am, I forced myself to eat them.
I started by putting them in my smoothies (weird, I know, but I had to hit my macros!)
Then, little by little, I started incorporating them into other dishes.
The other day at my brothers house, I was introduced to avocado toast.
I had heard about it before (I don’t live under a rock!) but never in my right mind would order something so disgusting sounding. Why would you ruin a perfect piece of toast? Just butter, please!
But WoW! After trying it once, it is my new obsession.
I even created a secret recipe that I have been making literally every day (ok, sometimes twice a day!)
I order the big bag of avocados once a week from Costco
I force everyone that visits my home to eat a piece of avocado toast (they all love it, I swear).
Today is an awesome day, because I’m going to try to convince a huge group of kids that avocado toast is the best thing ever!
I’m going to do it (and teach them how to make my secret recipe) during our LIVE Spanish class!
